CHICKEN AND BEAN BURGERS

As soon as my hubs comes home from work I tell him I'm trying something totally new for dinner. He gives me one of those looks. You know, the kind your man gives you when you ask him if you look fat in your jeans. Yeah, that one. I gave him an equally telling look right back at him that said, watch your step, mister, I'm working with knives in here. So after contemplating his reply options, he decided to go with, "Oh boy." Idk, I guess I was in an extra good mood because normally I wouldn't have been too fond of that response, but it wasn't accompanied by an eye roll or anything so I gave him a C minus. A passing grade, but MUCH room for improvement. 

I felt like making something different for dinner. Sometimes I get hungry for certain foods but I don't have a recipe for them. So I do what any logical, hungry person would do. I throw all the shit I've been craving in a bowl and cook it up. 


Hells yeah, baby. Sometimes it ends up a disgusting disaster. Sometimes it's a win. And this my friends? Total win. I had both my daughters and my husband cleaning their plates. 

That's right, bitches.

After dinner, the hubs made a point to tell me several times how much he liked supper. Not sure if he was trying to get some extra credit to bring up his shitty C minus or if he was trying to make up for his skepticism. Whichever it was, it worked. I put all of the kitchen knives back in their protective sleeves. He lived to see another day... and to be tested yet again, as all husbands are fated to be.

Okay, are you ready for the recipe? It's super easy!

CHICKEN AND BEAN BURGERS
Makes about 12 burgers


WHATCHU NEED:
  • 1 lb Ground Chicken
  • 1 can Black Beans
  • 1 can Pinto Beans
  • 1 1/2c cooked Brown Rice
  • 1/2c chopped Onion
  • 2 Garlic Cloves (or 1 tsp garlic salt)
  • Himalayan Pink Salt (desired amount)


WHATCHU DO:

1. Combine drained black beans, garlic, and onions in small pot and cook until onions are softened and half-way cooked. Approximately 6-8 minutes.

2. While black beans are cooking, microwave your brown rice. Follow directions on the package for 2 servings. You can opt to cook rice on the stovetop if you prefer as well. Set cooked rice aside.

3. Drain pinto beans and puree in food processor or blender.

4. Add all ingredients together and form burger patties. 



5. Cook for 6-7 minutes on EACH side.


6. Serve on your preferred buns. I use the Ezekiel English Muffins.


*Note: My family topped their burgers with tomatoes and ketchup and it was a big hit! You could also eat the burgers plain without a bun to save on some carbs!
